Bali Watermelon Margarita

This is the anti-Christmas drink: a frozen watermelon margarita. But I just had to show off the bottle of PTO we lugged to Bali recently. And, yes, that is an infinity pool overlooking the ocean. We stayed in a gorgeous villa with a band of happy travelers from Austin. We got a hankering for a margarita and tied that in with the delicious fruit that was available. You probably won't be making this at home, but you can daydream about a tropical afternoon in the pool...
  • Blender full of delicious sweet Balinese watermelon
  • Several ounces Paula's Texas Orange brought to Bali in checked baggage
  • Several ounces of $50-a-bottle (ouch!) Cuervo Gold tequila
  • Juice of about 50 tiny seedy limes squeezed by the kitchen help
  • Last of the ice from the overworked ice maker
Blend all ingredients in the blender until you have a frozen margarita. Serve in a glass decorated with appropriate tropical drink garnishes. Sip slowly and enjoy island life.

Caralina

The folks at Dripping Springs Vodka have created the perfect drink to showcase the flavor pairing of their delicious vodka and PTO. All you need is a little fresh-squeezed grapefruit juice, which just happens to be coming into season in Texas right now. Somehow the whole is greater than the sum of the parts in this simple drink, and everyone (including non-grapefruit-lovers like me) enjoys it.
  • 1 oz. Dripping Springs Vodka
  • ½-¾ oz. Paula's Texas Orange
  • 2 oz. fresh-squeezed grapefruit juice
Shake all ingredients with ice in a mixing glass. Strain into a chilled cocktail glass.

The Essential Cocktail
Ritz Cocktail

This is Dale's take on the Champagne Cocktail, which is an ode to the great Ritz hotels. It is a sophisticated cocktail, appropriate for that dress-up holiday party or an intimate New Year's Eve.
  • ¾ oz. cognac
  • ½ oz. PTO (substituted for Cointreau)
  • ½ oz. Luxardo Maraschino liqueur
  • ½ oz. fresh-squeezed lemon juice
  • Champagne
  • Flamed orange peel for garnish
In a mixing glass, stir together the cognac, PTO, Luxardo, and lemon juice with ice. Strain into a large cocktail glass and fill with super-chilled Champagne. Garnish with the flamed orange peel.

Don't miss the second annual Drink Local event Sunday, Dec. 5 starting at 6 p.m. at the Palm Door in Austin. Here's your chance to meet many of the producers of local spirits, even some that don't have products on the market yet. Also on the docket is the Drink Local Cocktail Contest, in which some of the best mixologists from around the state will battle in a mix-off of cocktail creations using local spirits and products. Spirits samples and cocktails will be served.

If you're finally getting to sit in front of your fireplace or just looking for a cozy sip after a long day, this twist on the classic Alexander is the perfect drink.
  • 1 oz. Paula's Texas Orange Liqueur
  • 1 oz. Godiva Chocolate Liqueur or Creme de Cacao
  • 1 oz. cream
Shake over ice and serve in a martini glass.
